Chicken Salad

Quick Chicken Salad•2 ( 12.5 oz) cans of chicken (or 3 cups diced cooked chicken)•3/4 cup light mayonnaise•1 cup red grapes, halved•1 green onion, diced•1 stalk celery, diced•1/2 cup diced apple•salt and pepper to taste•pecans or cashews, optional1.In a bowl, combine the chicken, mayo, grapes, green onion, celery, apple, salt, and pepper. Combine until well blended.2.Serve on rolls, bread, or croissants sprinkle with some cashews or pecans. This can also be served on a lettuce leaf.

Honey Pitas


My in-laws make some killer pitas. Here is their recipe.

You need parchment paper so that you can roll your Pita bread on it, and you'll need a pizza/pastry rolling pin so that you can roll out.

In Bosch bowl, using the dough hook, add:
2 cups warm water
1 Tablespoon honey
1 teaspoon salt
2 cups whole wheat flour
2 Tablespoon yeast

Mix thoroughly.  Add more flour if needed the mixture should clean the sides of the bowl.  Knead until smooth and elastic, from 7 to 10 minutes. Divide into 24 pieces for small balls the size of a golf ball or 12 pieces for larger balls. Roll into 1/4" to 1/8" thick circles on a floured surface.  I use a piece of parchment paper then I sprinkle a little flour on the paper. (Any creases in the dough will cause the pita to stick together and not form a pocket.)  Cover with plastic wrap and let rest for 30 minutes. Bake at 500 degrees on a preheated pizza stone for 2-3 minutes.  Watch carefully.  Remove from oven when pita puffs up and is slightly golden.  Place in bag to soften and flatten. 

Add to the Pita: alfalfa sprouts, tomato's, cucumber's, avocado, chicken, but our main stay is shredded cabbage with mayonnaise, salt and pepper. Enjoy

Chicken Italian Soup

This soup is amazing. Very hearty and full of flavor. It is adapted from Pioneer Woman's site.

Items you will need:   1-16 ounce package of salad noodles,  1-2 chicken breasts with bone in.  Olive oil, celery, onion, green pepper, 3 tomato's, flaked oregano, salt, pepper. 1 pint of whipping cream.  

Take 4 Tablespoons of flaked oregano and saute it on the stove with 1 Tablespoon of olive oil.
Saute for about one minute then set aside. If you don't have flaked oregano you can use powdered oregano, but only use 2 Tablespoons instead of 4.

Take one breast of chicken that has bone in an skin.  Put this in your pressure cooker with 1 Tablespoon of chicken bullion. You need the delicious flavor that this will produce. Put it in your electric pressure cooker for 20 minutes on High pressure.

Next chop 4 stalks of celery, 1 green pepper, 1 medium onion. Saute with a little olive oil for a few seconds  (You do not want these cooked,  they will cook when they are put in your pressure cooker with other ingredients.)

Remove chicken and shred.  Take drippings from chicken and strain. Add chicken and your dripping to your pressure cooker along with your onions, celery, and green pepper that you sauted. Add 16 ounces of salad noodles.  Cover the noodles with water(About 1 quart). Add 1 Tablespoon of chicken bullion to 1 cup water and add.  Add 1/2 teaspoon of real salt, and 1/2 teaspoon of pepper. Cook in your pressure cooker on low pressure for 2 minutes.   Then add one pint of whipping cream, and 3 chopped tomato's and your oregano that you have set aside. Mix through and let heat for an additional minute on saute setting.  Enjoy!

Banana Nut Pancakes

These pancakes are amazing. My two sister in-laws introduced me to the recipe

Ingredients:
1 1/2 cups of milk
1 Egg
4 Tablespoons of melted butter
2 banana's that have been mashed
1 Tablespoon of sugar   (honey or Xagave)
Put above ingredients into your Bosch with wire whisks and blend
Sift Together:
1 1/2 cups of ground whole wheat flour
3 1/2 teaspoons of baking powder
1 teaspoon of salt
Combine wet and dry ingredients together. When all is mixed add in 1/2 cup of any kind of nut.  (We use walnuts). Let rise 10 minutes. Cook and enjoy! 

Soft Carmel Popcorn

I have never liked hard or crunchy carmel popcorn, but that is just my preference. This recipe produces a very soft and delicious carmel popcorn

Ingredients:
1/2 cup brown sugar
1/2 cup butter
1 bag microwavable popcorn
10 marshmallows

Directions:
Microwave brown sugar and butter for 2 minutes. Add marshmallows. Microwave until melted, 1 1/2 to 2 minutes. Pour over popcorn and coat stirring with spoon. Enjoy.

Yummy Eclairs

These are sooo Good! & Sooo Easy!

Eclair Shells:
1 cup water
pinch of salt
dash of sugar
4 ounces or 1 stick butter
1 cup flour
5 eggs

 Eclair Cream:
1-6oz package of vanilla pudding(make as per recipe minus 1/2 cup milk)
4oz of cool whip
1 tsp. vanilla extract

Chocolate Ganache:
5 ounces bittersweet chocolate
 2 ounces butter

Preheat oven to 425 degrees. Bring salt, sugar, water, and butter to a boil in pot. Add flour all at once and stir until it forms a film on bottom of pot. Cool mixture and add eggs 1 at a time until completly incorporated. Pipe 5 to 6 inch rods of mixture onto lightly greased sheet pan. Bake for 17 minutes. Turn oven down to 350 degrees and cook for 15 more minutes. Cream: Make pudding as per recipe minus 1/2 cup milk and add cool whip and vanilla. Cream together and chill for 1 hour. Chocolate ganache: Melt chocolate and butter together over low heat, stirring constantly. Or microwave stirring every 15 seconds. Using a pairing knife, poke a hole into one end of each eclair shell. Put a small tip on a pastry bag and fill bag with cream. Squeeze cream into each shell until eclair feels heavy. Spread chocolate onto top of eclairs and let cool and harden. Serve cold or room temp.

Pot Stickers

This dough is very easy to make:   You put 7 cups of white flour in your mixer with 2 1/2 cups of water.  Mix well, about 3 minutes.  Then roll our on your counter.  Make sure your counter is well greased and floured so that they don't stick.  I just spray some vegetable spray on the counter, then sprinkle flour over it.  Roll out until very thin. About 1/8 of an inch thick.  I use a large cutter to cut it out, a 4 1/4 inch cutter.


The mixture is as follows:  
A pound of pork, we use pork sausage.
Add the following to the pork:
1/4 cup soy sauce
1 Tablespoon of chicken bouillon
1 teaspoon of salt
1/8 of a teaspoon of ginger.(You can add more if you like the ginger flavor)
1 Tablespoon of sesame seed oil
1 small cabbage ground. (I grind this up on my large slicer shredder blade, it is perfect)

Mix this all together.  You can also add shredded carrot if you would like.

You put 1 Tablespoon of this mixture on each pot sticker.
Next, pour a little oil in the bottom of your pan.  Fry them on both sides until they are good and brown.  Then pour about 1/8 cup of water in the pan, put the lid on an cook.  You wait until the water is all gone. Thats how you will know they are done. I serve them with rice and a vegetable and salad. We serve them with soy sauce. You will love these they are very tasty.

Key Lime Tarts

These are to die for. The recipe is from my sister-inlaws.
Ingredients:
1 can of sweetened condensed milk
1-8 oz cream cheese
2 cups cool whip 
3-4 drops of lime essential oil 
Crust
1 cup crushed graham crackers
3/4 cup finely chopped pecans
4 Tbsp. of unsalted butter (if you don't have any you can use salted butter)
Mix all the ingredients at the top together, then mix the ingredients at the bottom together in seperate bowl. Put 1 Tbsp. of the crust in the bottom of a muffin paper which is put inside a muffin pan.  Then at down and add the cheese cake mix on the top until it reachs the top of the muffin tin.  These are wonderful.  A party lovers favorite.
