Honey Pitas


My in-laws make some killer pitas. Here is their recipe.

You need parchment paper so that you can roll your Pita bread on it, and you'll need a pizza/pastry rolling pin so that you can roll out.

In Bosch bowl, using the dough hook, add:
2 cups warm water
1 Tablespoon honey
1 teaspoon salt
2 cups whole wheat flour
2 Tablespoon yeast

Mix thoroughly.  Add more flour if needed the mixture should clean the sides of the bowl.  Knead until smooth and elastic, from 7 to 10 minutes. Divide into 24 pieces for small balls the size of a golf ball or 12 pieces for larger balls. Roll into 1/4" to 1/8" thick circles on a floured surface.  I use a piece of parchment paper then I sprinkle a little flour on the paper. (Any creases in the dough will cause the pita to stick together and not form a pocket.)  Cover with plastic wrap and let rest for 30 minutes. Bake at 500 degrees on a preheated pizza stone for 2-3 minutes.  Watch carefully.  Remove from oven when pita puffs up and is slightly golden.  Place in bag to soften and flatten. 

Add to the Pita: alfalfa sprouts, tomato's, cucumber's, avocado, chicken, but our main stay is shredded cabbage with mayonnaise, salt and pepper. Enjoy
